Ingredients
- 1 chicken
- I onion, finely chopped
- 1 cup cooked rice
- 2 tbsp parsley finely chopped
- 2 tbsp coriander, finely chopped
- ½ cup grated carrot
- 1 cup sweet chilli sauce
- 2 tbsp soy sauce
Directions
- Preheat oven to 180C, Mix onion, rice, parsley, coriander, carrot and ½ cup sweet chilli and stuff the chicken with it.
- Mix the other ½ cup of sweet chilli with the soy sauce and apread over the chicken.
- Bake for 90 minutes or until the juices of the chicken run clear.
- Delicious served with roasted vegetables, either warm or at room temperature.
